    • Filet with Lobster Medallions - A center cut Black Angus filet, grilled to your liking, garnished with lobster medallions, oven-glazed with Baernaise sauce.
    • Roasted Duckling - Young, free-range bird, delicately seasoned with rosemary and mild English mustard, crisply roasted on a bed of fresh citrus and root vegetables, finished with its own roasting juices, maple syrup, creme fraiche and dark rum. Garnished with poached sundried cherries and orange zest.
    • Paupiettes of Veal "Chef Style" - Veal medallions, seasoned with lemon grass/basil mixture, stuffed with a brie cheese, sauteed in extra virgin olive oil, finished with a Vermouth/tomato flavored demi glace and creme fraiche.
    • Shrimp Provencale - Jumbo tiger shrimp, delicately seasoned with lemon grass, lavender flowers and chives, suteed in garlic butter with wild mushrooms and sundried tomatoes.
    • Curried Sea Scallops - Tender poached jumbo sea scallops, mildly seasoned with Madras curry powder and ginger, suteed in butter with shallots, deglazed with Sauvignon Blanc and finished with a delicately seasoned saffron cream sauce.
